Sandwich Filler

Faux Chicken Salad

1 cup/pack tempeh, cubed
1 stalk celery, minced
1 clove garlic, minced
1 dill pickle, minced
2 tablespoons parsley, chopped
1/2 cup vegan mayo
1 teaspoon dijon mustard
1 tablespoon low sodium soy sauce
1 teaspoon curry powder
  1. Steam tempeh for 15 minutes.
  2. Mix everything else in a bowl. Add tempeh and toss.
  3. Serve with toasted bread or wrapped in tortilla.


Faux Tuna Salad

3 cups cooked chick peas
1 1/2 stalks of celery, minced
1 dill pickle, minced
2 green onions, chopped
3/4 cup vegan mayo
1 tablespoon low sodium soy sauce
1/4 nutritional yeast
pepper to taste
  1. Mash chick peas with the back of a fork.
  2. Combine everything.
  3. Serve over toasted bread.
